Harvest Season: Mature agaves harvested during peak sugar concentration
Agave Composition: Espadín & Papalome agaves
Cooking Process: Slow-cooked in traditional earthen pit ovens with volcanic stone
Milling: Tahona stone and artisanal crushing methods
Fermentation: Naturally fermented for approximately 8–12 days using wild native yeasts
Distillation: Double distilled in traditional copper alembic stills
Aging: Rested in stainless steel to preserve the purity of the agave character

Production Process
Throughout fermentation, meticulous attention is dedicated to preserving the authentic aromas and complexity of both Espadín and Papalome agaves. Natural open-air fermentation allows the wild yeasts and surrounding environment to shape the mezcal’s distinctive character, creating layers of earthy minerality, fresh herbs, citrus, and soft smoke.
Following fermentation, the mezcal is carefully double distilled in small copper stills to achieve balance, elegance, and depth while maintaining the expressive nature of the agave. Resting in stainless steel enhances integration and smoothness without overshadowing the spirit’s vibrant and smoky profile. The result is a refined artisanal ensamble with a long mineral finish, silky texture, and the unmistakable essence of traditional mezcal craftsmanship from Oaxaca.
