Production Process

Every bottle of Sobre Piedra Mezcal Espadín reflects generations of artisanal mezcal-making tradition in Oaxaca. Great care is taken throughout the production process to preserve the authentic character of the agave and the natural complexity of the terroir.

The agaves are slowly roasted in underground stone ovens, allowing the hearts of the plant to develop deep smoky notes while maintaining natural sweetness and earthy minerality. After cooking, the agave is crushed using a traditional tahona stone, extracting rich juices and fibers essential to the mezcal’s texture and aromatic depth.

Natural fermentation takes place in open-air wooden vats using native wild yeasts, enhancing the mezcal’s vibrant aromas and layered flavor profile. The spirit is then double distilled in copper stills to achieve balance, purity, and elegance while preserving the smoky, mineral-driven essence that defines Sobre Piedra.

The result is a refined artisanal mezcal with notes of roasted agave, soft smoke, herbs, citrus, and earthy minerals, finishing long, smooth, and expressive.
